A friend who had been using this 1950s junk store camera as a stash box gifted it to me. The Pho-Tak "Time" Traveler has a shutter speed of 1/50 of a second and an f stop of 11. The lens is a simple meniscus. I shot a roll of CineStill BWxx and a roll of CineStill 400D. If anything comes of it, I will let you know. #photography #ShittyCameraChallenge #Pho-Tak

#Pho

Had a couple of pretty successful experiments using tetrapak broth and bouillon so today I'm having my first go at making my own beef broth. Should produce enough freezer broth for a goodly number of slurps.

The local grocer does not carry oxtail, so there's a few marrow bones and a couple slabs of brisket.

I'm using Joshua Weissman's deal as my basic guide, though I didn't get any chuck and I believe brisket is more often put in there.

Top shot of a stock pot, in which beef bones, brisket, onions, ginger and spices are variously floating or at the bottom. It will simmer for several hours and be served for dinner later in the properly-accompanied style. More photos to come. Perhaps video of the mess I make of myself when eating Pho.
Photo of my stovetop, evidently at 6:48 if you believe the stove (don't believe the stove). At rear is a large stock pot which contains simmering Pho broth. Not especially clear, which is the mark of a quality broth in these matters. On the front element is a smaller saucepan which has homemade Hoisin sauce simmering, because in spite of not one but two trips to the grocery store today, I forgot to get Hoisin Sauce for the Pho. It's not bad actually, though if doing it again I would omit the peanut butter, I'm positive there is little or none of that in the Hoisin served at my favorite Vietnamese eating establishment. At the top left a bit of the brisket from the broth is visible, which will be the beef in our Pho this evening.

Just back from going for #pho. It's nasty weather tonight, windy blowing rain, snow and sleet. Glad it wasn't far to walk.

Home to see the first off the accumulation on the grassy areas only. There's more where that came from! Still too warm for a while on the paving.
