Busy weekend, with an out-of-town sew day; grandkid dropoff, pickup, and supervision for acrobatics camp; a quilt-as-you-go class; #fermentation class (made #sauerkraut with red onion & dill; #korean #LanguageLearning #kdrama watchparty; and canvassing for my city councillor. Taking it easy this morning. Summers are fun, but a bit intense at times!

So glad I discovered that you can make #sauerkraut without all the massaging... just leaving the cabbage in a bowl for 3 hours has the same effect... I've just set off a new batch... using a cabbage my friend gave me... I will give her a jar when it's ready... #fermentation
After canning freezer jam on Monday, I needed more jars (and pectin), and I still wanted to get some #fermentation done. Luckily, @whoosh was willing to do a #BodyDouble work session today, so she shredded unnecessary documents, while I shredded veggies to make #kimchi and #sauerkraut. I added jalapeño peppers and an onion to the sauerkraut, so I'm curious about how it will turn out. I didn't brine the cabbage for long to make the kimchi, but I still hope to make fermented pickles with that brine.
@uxmark I also got some jalapeños that I think I’ll add to some #sauerkraut. It’s fun to experiment.

You may have missed our back-and-forth dialogue over the last couple of days about our methods of making #kimchi.
Looks like you're a member of our club: cutting the cabbage and water-brining before mixing together. You have a fancy setup, but I can only store 2 litres of kimchi or #sauerkraut at a time. Not enough refrigerator space for more.

I've just set off another batch of masala kraut... I actually read the recipe properly this time... and found a much easier method for #sauerkraut making... no need for all that massaging... just mix the salt & chopped cabbage... then wait for 1-3 hours... #fermentation

If I am trying to make my homemade sauerkraut crunchier, do I:
* Mash the cabbage more
* Mash the cabbage less
* Use more salt
* Use less salt
* Something else?
My sauerkraut is too mushy :(
Ha tardado, pero al fin está rezumando. Y yo que pensaba que había dejado suficiente espacio.
Me viene un poco mal porque justo hoy me voy de viaje y no tengo intención de llevármelo. Lo pondré sobre un plato y que haga lo que quiera.
