Very pleased with the bread that I baked this morning, my Mediterranean bread.
It has pulled open beautifully, where I scored it. This is not always guaranteed with sourdough bread that contains a lot of wholemeal flour.

Este es el aspecto de mi masa madre tras 36 horas de fermentación (anoche se me olvidó refrescarla ). Creo que tiene buena pinta, pero no me convence su olor. No sé explicar a qué huele, pero no es lo que yo esperaba. ¿Alguien escapaz de describir a qué tiene que oler?

I made potato buns again but this time I used an egg substitute to reduce the cholesterol (and so I wouldn’t have to buy eggs). They look and smell just as good as the first time I made them!

Working on another attempt on that Breadtopia.com recipe for the Bavarian Seeded Sourdough that I made a couple weeks ago (This is the one with the soy sauce & sesame seeds). I am continually disappointed by losing all my overnight rising progress when transferring a dough from banneton to oven, so this time I’m goinge rogue, and planning on baking it in a large Pullman pan.
