I find I have difficulty keeping food from sticking to my good quality stainless steel frying pans, no matter what technique I use. I have well seasoned cast iron skillets that work well for most foods.<br> I have seen titanium pans advertised as non-stick, and am considering buying one. They can be a bit pricey. Patrick<p>I might catch some shit over this, but I use water to clean my cast iron frying pan. and a green scrub pad. Never soap, and it doesn't go anywhere near the dishwasher.</p><p>I rinse, scrub, rinse, scrub, until any and all particulate is gone, then dry, and lightly oil the pan, making sure there's no water left, and it looks clean. </p><p>I absolutely LOVE cooking with cast iron, I have one of those shitty glass top stoves, and the way it cycles through heating and cooling means a light pan never gets consistent heat to the surface, where cast iron will stay hot for longer when the heat cycles down, giving some consistent temps to what's in the pan. </p><p>This is said frying pan.
