From the Kitchen today ....
The mangoes are peeled, sliced and in the dehydrator. A messy business, but also aromatic. I'll let them go about 6 hours, check them and shuffle the trays and probably set for another few hours overnight. Lovely small gifts for the raft of people I am meeting next week.

With my #NaturopathPrescribedDiet (very restrictive), green salads from the garden are generally my plat de jour. I add protein to the salads, usually tofu or dried beans. And the best ever dried beans for this purpose come from the freezer via the Instant Pot, via "A Pot of Lima Beans/Butter Beans" from the mentioned cookbook.
Honestly, it is the best, most flavoursome way to cook large lima beans, and I am adoring them. I cook a large pot and bag them up for the freezer.
I've sauteed a whole lot of tofu for use during the week - easy adds to salads, cooking sauces, curries, et al.
